Delicious, Crispy, and Juicy Chicken Parmesan

Ingredients
- 4 skinless, boneless chicken breast halves
- 2 large eggs
- 1 cup panko bread crumbs
- 1 cup freshly grated Parmesan cheese
- 1/2 - 1 cup olive oil for frying
- 1 cup tomato sauce
- 1/2 cup fresh cubed mozzarella cheese (or more)
- 1/4 cup fresh chopped basil
- 2 tbsp all-purpose flour
Steps
- Preheat your oven to 450 °F (230 °C)
- Beat 2 eggs in a bowl
- Mix 1 cup bread crumbs and 1/2 cup Parmesan cheese in a second bowl
- Using a sifter, sprinkle flour over the chicken breasts, coating both sides
- Dip a flour-coated chicken breast in the beaten eggs
Transfer it to the bread crumb mixture
Press the crumbs into both sides
Repeat for each chicken breast
Let the chicken breasts rest for 15 minutes.
- Heat olive oil in skillet on medium-high until it simmers
Cook each chicken breast until golden, about 2 minutes per side
- Transfer chicken breasts to baking dish
Layer each chicken breast with equal amounts of tomato sauce, mozzarella cheese, basil, and parmesan cheese
- Bake in oven for 20 minutes
Cheese should be browned and bubbly
Chicken breasts should no longer have a pink center
and should have an internal temperature of 165 °F (74 °C)
